Provisions: Spicy Guacamole
One of the best parts about camping is definitely the food. Whether it's waking up at the crack of dawn to the smell of breakfast hash permeating the air. Or sitting around the campfire telling each other scary stories, waiting for the s'mores to have the perfect consistency of melted goodness. Either way, some of the best memories revolve around the dinner table... or in this case around the fire pit.
But what about those moments where you just got done hiking a couple of miles, you get back to your campsite and your stomach begins to growl? Suddenly, a 20-25 minute meal seems like an eternity. In comes our spicy guacamole recipe to the rescue! It's simple, it's fast and it's damn good! Being that my girlfriend is a professional Chef and specializes in all things Mexican, you can rest assure that this guacamole will not disappoint.
Luckily avocados can be found at just about any grocery store and if you happen to purchase them underripe, just have the clerk bag them up in a paper bag. Growing up with an avocado tree almost my entire life, I was taught to always store underripe avocados in a paper bag... I think it's science. This is also ideal while camping, because you want as many low maintenance ingredients as possible.
I've come to understand that guacamole is a recipe that has many different takes on it. Some like to add mango and others like to add garlic, it can be very spicy or not spicy at all. Whatever your preference may be, this recipe is more of a traditional approach. We like it simple, fresh and spicy!
After peeling, chopping and dicing the onion, we did the same process with the jalapeño and cilantro. If you want the spice level to be a little more on the mild side, simply deseed the jalapeño and let it sit in lime juice for a couple of minutes. Once all of the ingredients were chopped and diced, we simply added them to a bowl. Add the avocado, salt, pepper, mix and mash... and voila! It's ready. Don't forget the chips!

- 2 avocados (peeled, pitted, and mashed)
- 1/4 cup cilantro (chopped)
- 1/2 red onion (finely diced)
- 1 jalapeño (finely diced)
- 1 lime juiced (or more to taste)
- Salt and black pepper to taste
- In a medium bowl combine all ingredients and add salt and pepper to taste.
